The Last Day of Kwanzaa Imani - Faith (ee-MAH-nee) Faith focuses on honoring the best of our traditions, draws upon the best in ourselves, and helps us strive for a higher level of life for humankind, by affirming our self-worth and confidence in our ability to succeed and triumph in righteous struggle. With the new year brings the final day of Kwanzaa Imani. Time to renew faith. Faith in God, faith in our community and each other. Kwanzaa Imani Activity Imani is celebrated with a feast! it is also (and always) time to remember those who came before us and we honor them with this feast. For this feast include all of the tradtional elements of Kwanzaa, light the Kinara, pour libations for the ancestors. Invite friends, family and co-workers to participate. Kwanzaa Feast Recipes Caramelized Plantains ( serves 6-8) 4 ripe plantains, 1TBL butter, 1TBL sugar Peel the plantains and slice them into l/2-inch rounds. Heat the butter to foaming in a heavy skillet over medium heat. Add the plantain slices to the butter and cook for 5 to 8 minutes, or until they are lightly browned and slightly caramelized. Sprinkle the plantain slices with the sugar, allow the sugar to caramelize slightly, then remove the plantains from the skillet. Serve warm.
Great served over vanilla ice cream, topped with the caramelized butter from the pan!
Yassa Chicken (serves 12) A Simple Senegalese Recipe 2 frying chickens (2-1/2 to 3 pounds each) cut into 8 pieces 2 cups lemon juice, strained 6 large Bermuda onions, finely chopped 4 tablespoons fresh hot chiles, finely chopped 10 teaspoons peanut oil 1/2 cups water 1 chile, pricked with a fork 1 teaspoon ground ginger Salt and ground black pepper to taste
1. Mix the lemon juice, onions, half the chopped chiles ginger, salt, pepper, and 6 tablespoons of the peanut oil to create a marinade.
2. Place the chicken in a large bowl and cover it with the marinade. Refrigerate for at least 2 hours.
3. Remove the chicken from the marinade, place it in shallow baking dish, and broil until lightly browned (save the marinade).
4. Remove the onions from the marinade with a slotted spoon and cook them in the remaining 4 teaspoons of oil in a Dutch oven for about 5 minutes, or until soft; do not brown.
5. Add the marinade, chicken, water, and the rest of chopped chiles.
6. Stir and simmer for about 20 minutes, or until chicken is well cooked.
7. Serve over steaming hot rice.
